Kid-Friendly Cinnamon Apple Crumble Muffins
Cinnamon and fall have become synonymous. The smell of cinnamon spiced apples in a kitchen any time of year brings to mind warm colors, pumpkins, and flannel. Seasonal favorites don’t have to be relegated to “cheat days” or “cheat meals”. They can be easily updated to reflect your healthy habits and reinforce for your family that you do not have to sacrifice fun or flavor to eat well.
These cinnamon muffins with warm apples and a full serving of Healthy Height are a great Saturday morning brunch addition. We served them with local grass fed butter, fresh homemade cider, eggs and bacon. For any of you gluten free households, these are 100% gluten free. For any of you non-gluten free households, your family won’t know the difference.
This recipe is super simple, it uses a box mix, *gasp*. It’s a delicious blend and quite frankly I’m happy to have fewer steps so I can spend more time around the table enjoying our quality time.

- 2 scoops of Healthy Height Plain or Vanilla mix
- Krusteaz Gluten Free Cinnamon Swirl Mix
- Vegetable Oil
- 3-5 Apples
- Muffin tin
- Muffin cups
- Non-stick pan with lid
I like to get the muffins made and finish the apples while they are in the oven.
Preheat the oven to 400F. Line your muffin tray with baking cups. Tulip shaped baking cups elevate homemade muffins, you can find them easily on the internet and many grocery stores carry them now.
Following the instructions on the Krusteaz box, prepare your muffin mix.
Using a dry ingredient measuring cup, fill your muffin cups half way. Set aside 1.5 portions of your batter. Keep two muffin cups empty. Sprinkle the cinnamon/sugar on the midway mark of your muffins then fill batter to approximately ¾ of the cup.
Combine the 1.5 portions of batter with a full serving of Healthy Height, 2 scoops, unflavored or vanilla. This will become two portions and will be two muffins for your little one. Fill muffin cup halfway, sprinkle cinnamon/sugar, fill to ¾ with remaining batter. I keep these two on one corner of the tray and keep that corner marked with a toothpick outside the muffin cup so I remember which are which. They will look very similar.
Sprinkle cinnamon/sugar topping on top of all muffins.
As soon as the oven is preheated, put muffins inside and set the timer.
Cut approximately ¾ of an apple per person eating. Slice into quarters removing seeds and core.
Using a non-stick pan, melt two tablespoons of butter on medium heat. Place your apple quarters in the melted butter using tongs. Be sure all apples are in contact with the pan with space between them. Sprinkle cinnamon on apples. I personally like to add a few short shakes of cardamom as well. Place a lid on the pan and allow the apples to sweat and soften. Turn them over as they are lightly golden on one side.
Once both sides are gold in color and fork soft, remove from heat and leave lidded.
As the muffins are ready (test with a toothpick, they are ready when the toothpick comes out clean), serve with a scoop of apples. Be sure to put your Healthy Height muffins on your child’s plate. Complete your brunch with your family’s favorite brunch classics.
