Protein Packed Peanut Butter Buckeyes

Healthy Height mom and holistic nutrition and habit expert, Christina Wehry, is back again with a seasonal favorite. This week she's sharing her childhood favorite - peanut butter buckeyes!

 

 

In my birth state, Kentucky, we call these candies 'buckeyes'. Apparently that's a regional thing. Whatever you call this peanut buttery chocolate covered deliciousness, you want to make them immediately. The pickiest, most skeptical humans can't get enough of them. You can substitute more Healthy Height for the powdered sugar. You can completely replace one with the other, if you'd like. I opted to keep 1 cup of powdered sugar in this recipe to keep a sense of holiday candy festivity. If you create them to be eaten outside of a celebration, feel free to do 2.5 cups of Vanilla Healthy Height and zero powdered sugar.

Ingredients:

  • 1 ½ cups  Vanilla Healthy Height
  • ½ cup melted butter, melted
  • 1 ½ cups peanut butter
  • 1 cup powdered sugar
  • 1 cup chocolate chips, enough for dipping
  • ¼ cup whipping cream

Preparation:

Mix butter, peanut butter, and powdered sugar in a food processor until well blended. You can stir by hand as well if you are looking for a full upper body workout.

Make 1 inch balls and freeze for about 20 minutes or until firm. You can make these balls in a few ways. Here they are from simplest to most involved:

  1. Scoop a spoonful on a dish lined with parchment paper that can fit in your freezer
  2. Use a melon baller to scoop on a dish lined with parchment paper that can fit in your freezer
  3. Put mixture in a ziplock bag with a small corner snip or a pastry bag and pipe out about 2 tablespoons worth on a dish lined with parchment paper that can fit in your freezer

After the mixture is frozen (you want them to be pretty stiff so they can hold up to the melted chocolate) create a double boiler (if you don't have one) by placing a sauce pot half full of water to boil on the stove with a metal mixing bowl on top. Once the water is boiling, place ¾ cups of chocolate chips and ¼ cup of whipping cream in the metal mixing bowl. Stir constantly as the chocolate melts and integrates with the cream.

Remove balls from the freezer and using a rubber spatula or spoon drape melted chocolate over the hardened peanut butter. I personally coated about ⅓ of the ball. You can coat more or less depending on your taste.

Place completed buckeyes on parchment or wax paper and into the refrigerator to harden. You can store in the refrigerator until you are ready to serve.
