Homemade Gingerbread Cookies

Healthy Homemade Gingerbread Christmas Cookies

We partnered with Melanie, mom behind @cleanlittleplates, to make healthy, homemade Christmas cookies this year. Make cut out holiday shapes then decorate these gingerbread cookies with your kiddos as a fun holiday activity. They're great for sharing at a party or cookie exchange, and will help your little one get the quality nutrition and protein they need during this crazy holiday season!

I've partnered up with Healthy Height to bring you a totally delicious gingerbread cookie recipe that will keep the holidays both happy and health! Healthy Height's vanilla shake mix subtly adds protein, vitamins, minerals, and healthy fats to their day."


  • 2-1/4 cups spelt flour
  • 1/4 cup Healthy Height vanilla shake mix
  • 1-1/2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/3 cup coconut sugar
  • 1/3 cup coconut oil
  • 1/3 cup molasses
  • 1/4 cup unsweetened applesauce
  • 2 tbsp unsweetened nut milk
  • Directions:

    • Preheat oven to 325F
    • In one bowl, combine all dry ingredients
    • In a mixer, combine all wet ingredients (coconut oil, molasses, applesauce, nut milk) and beat until smooth
    • Add dry ingredients to the mixer and combine
    • Roll out dough on floury surface. The dough may be sticky; just add more flour if needed. You want dough about 1/2 an inch thick.
    • Cut dough into desired shapes and place shaped dough on parchment paper on baking sheet.
    • Place shaped dough in freezer for 15 minutes to firm up
    • Transfer baking sheet to oven, and bake cookies for 10-12 minutes
    • Let cookies cool a bit before eating or decorating, as they will firm up as they cool down.
    • Enjoy!
