Banana Chocolate Chip Protein Muffins - A Summer Adventure in Baking!

Ingredients (for approx. 12 muffins):

  • 1 and 1/8 cups all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 scoops Kidz Protein Powder (Vanilla)
  • 2 tbsp softened butter
  • 1/4 cup sugar
  • 1/8 cup light brown sugar
  • 3 very ripe bananas
  • 1/2 cup plain or vanilla yogurt
  • 1 egg
  • 1/2 tsp pure vanilla extract
  • 1/2 cup water
  • Handful of chocolate chips

Instructions:

  1. Prep Oven: Preheat your oven to 350°F (175°C). Line or spray a 12-well muffin tin to get ready for the muffin magic.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and Kidz Protein Vanilla Powder. Set this aside for later.
  3. Cream Butter & Sugars: In a separate bowl, beat the softened butter, sugar, and light brown sugar until creamy and smooth.
  4. Combine Wet Ingredients: Add the very ripe bananas, yogurt, egg, and vanilla extract to the butter mixture. Mix well until all the ingredients are fully combined.
  5. Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Fold gently until just combined – don’t overmix!
