Dinner is covered. This carrot potato soup is packed with the protein, vitamins and minerals your kids need to thrive. This recipe is a perfect way to use our plain Grow Daily 3+ or Grow Daily 10+.
Directions:
1. Melt butter in a large pot over medium heat. Add onion and sauté for 5 min. Add garlic and cook another minute.
2. Add carrots, potatoes, celery, herbs and salt and pepper. Stir and cook another 3 minutes.
3. Stir in broth and bring to a boil. Reduce heat to a simmer, cover and cook for 20 minutes.
4. Transfer 1 cup of soup to a blender and blend until smooth. Return blended soup to the rest of the soup. Repeat with another cup of soup and add Grow Daily Plain, blend, return to soup and stir. Add salt and pepper to taste.
5. Serve with grated or shaved parmesan. Enjoy!
