Carrot Potato Soup Recipe

Ingredients:

  • 1 Tsp butter
  • 1 medium-sized onion, diced
  • 3 cloves minced garlic
  • 2 celery sticks, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 tsp Italian herbs
  • 1/2 tsp fresh thyme
  • 1/8 tsp pepper
  • 1/2 tsp salt
  • 2 1/2 cups vegetable or bone broth
  • 5 scoops Grow Daily Kids 3+ Plain or Grow Daily Boys 10+ Plain
  • 1/4 cup parmesan (optional)
  • crusty bread for serving (optional) 

Directions:

1. Melt butter in a large pot over medium heat. Add onion and sauté for 5 min. Add garlic and cook another minute.
2. Add carrots, potatoes, celery, herbs and salt and pepper. Stir and cook another 3 minutes.
3. Stir in broth and bring to a boil. Reduce heat to a simmer, cover and cook for 20 minutes.
4. Transfer 1 cup of soup to a blender and blend until smooth. Return blended soup to the rest of the soup. Repeat with another cup of soup and add Grow Daily Plain, blend, return to soup and stir. Add salt and pepper to taste.
5. Serve with grated or shaved parmesan. Enjoy!
