Sweet & Sour Meatball Kabobs

Ingredients:

For the Meatballs:

  • 1 pound ground veal
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1 large egg
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey

  • Skewers (soak in water if wooden)

For the Sweet and Sour Sauce:

  • 1/2 cup pineapple juice
  • 1/4 cup ketchup

  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Kabobs:

  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 white onion, cut into chunks
  • 1 cup pineapple chunks

Instructions:

1. Make the Meatballs:
In a bowl, combine the ground veal, breadcrumbs, onion, garlic, egg, soy sauce, vinegar, honey, Healthy Heights Grow Daily Boys 10+, salt, and pepper. Mix until just combined—don’t overmix, or the meatballs can get tough. Shape the mixture into 1-inch balls.

2. Grill the Meatballs:
Thread the meatballs onto skewers, alternating with bell pepper and pineapple chunks. Preheat the grill to medium-high heat and lightly oil the grates. Grill the skewers for about 10–12 minutes, turning occasionally, until the meatballs are cooked through and the veggies are tender.

3. Prepare the Sweet and Sour Sauce:
While the kabobs are grilling, whisk together the pineapple juice, ketchup, brown sugar, and soy sauce in a saucepan. Bring to a simmer over medium heat. Stir in the cornstarch mixture and cook until the sauce thickens, about 2–3 minutes.

4. Glaze and Serve:
Brush the kabobs with the sauce during the last few minutes of grilling. Serve with extra sauce on the side for dipping.
