Move over tater tots! 

This recipe is a great nutritious replacement for our potato obsessed kids. Packed with Vitamins A, C, K, B6, fiber, and protein. We use our Healthy Heights Plain Grow Daily 3+, so you can feel good about your kids getting the protein and micronutrients they need. 

Veggie Fritters Recipe

Ingredients:

  • 1 cup corn
  • 2 shredded zucchinis, leave the skin on (extra nutrients!)
  • 1/4 cup Healthy Heights Plain Grow Daily 3+ or Kidz Protein
  • 1/2 cup finely chopped red bell pepper
  • 1/2 cup finely chopped orange or yellow bell pepper
  • 1 finely chopped shallot or yellow onion
  • 1 cup flour of choice
  • Pinch of salt and pepper
  • 1/2 tsp garlic powder

Directions:

1. In a large bowl, mix together corn, peppers, zucchini, and onion. 

2. In a smaller bowl, mix together all dry ingredients, including

3. Pour dry ingredient mixture into the large bowl with the veggies, mix til combined. 

4. Shape into palm sized patties. Dust hands with flour if the mixture gets too sticky. 

5. Heat 1 tbsp of olive oil in a sautee pan.

6. Cook fritters for 2-3 minutes on each side, or until golden brown. 

7. Let cool for a few minutes before serving. Enjoy!
