Healthy "Mix-In" Muffins for Kids


  • 1-3/4 cups old fashioned oats
  • 3/4 cup Healthy Height Plain
  • 1 cup plain low fat Greek yogurt
  • 2 eggs + 1 egg white
  • 1/2 cup honey
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 Tbsp ground flax seed
  • 1 tsp vanilla
  • 2-3 ripe bananas


Mix-ins of choice (we like semi-sweet chocolate chips and blueberries! You can also try strawberry pieces, shredded coconut, white chocolate chips, etc.)


  1. Place oats in food processor and pulse to break up oats (Tip: do not overprocess - it should not be flour consistency)
  2. Add all remaining ingredients into food processor and process until completely blended
  3. Move to a bowl and add mix-ins
  4. Divide batter between muffin/cupcake liners
  5. Cook at 350 degrees F for about 20 to 24 minutes (Note: they do not fluff up too much)
